170 grammes of Farro or you can use the equivalent amount of Spelt
60 grammes of tinned chickpeas(drained)
a bunch of rocket salad
A lemon
Approx 240 ml of Olive Oil
Salt and Pepper
Parmesan Cheese
Method:
Boil the Farro in plenty of water until al dente.Place in a bowl together with the chickpeas, a squeeze of lemon juice and season with the Salt and Pepper.Check and adjust the seasoning if required.If the flavour is overpwered by the lemon adjust by adding some more olive oil.
Now allow to sit for fifteen minutes
Pile some of the rocket onto plates, top with your mixture and top off with some shavings of Parmesan and serve with warm crusty bread and a good white wine
